Hello All,
I am requesting scholarly references (books, articles, journals, etc.) on the dating of the biblical books. For example, if I want to know what is the earliest copy of Romans, I would expect to be provided the date of the manuscript, location it was found, and its language. I understand that this type of information may be spread out over multiple resources; however, if a one-stop-shop is available, that would be great!

I’m sure you understand that the earliest copy of a given book of the bible would probably not be complete, and would also date from well after the original composition of said book? Scholars use a lot of criteria to come up with an estimate of when the book was written, and I don’t know that the age of the earliest copies is even the most significant of them.
We have no original copies of anything written in ancient times, biblical or not. Earliest surviving copy is what you mean. And perhaps someone can point you to a one-stop-shop, but since this is not a particular area of interest for me, I honestly wouldn’t know. I think with a bit of research (at a good research library, perhaps) you could find what you’re looking for. And every book of the bible has a Wikipedia article devoted to it, which would presumably contain good information about dating, and also citations of relevant texts you could read.
