I fell asleep watching tabor speak on this a couple of nights ago, and I think he was speaking specifically of an actual text of Matthew in Hebrew that has survived and that does not appear to be a translation from Greek. I believe it is preserved in a medieval (14th cent?) Jewish refutation that quotes the Hebrew Matthew extensively.
I don’t think tabor mentions it, but here are also some apparent word plays in Greek Matthew that only make sense in Hebrew or Aramaic–thise give me pause.

Of interest to me is Mt. 21:17:
He left and went out to Bethany and (spent the night) there and there he was
explaining to them the Kingdom of God.”
Some folks get from this deviation from the Greek a whiff of the Secret Gospel of Mark:
